Pesto Lasagna
Ingredients
Pesto
- 2 cups basil leaves
- ⅓ cup pine nuts
- ½ cup parmesan cheese
- ½ tsp salt
- ½ tsp black pepper
- ¼ cup lemon juice
- ⅓ cup olive oil
Filling
- 32 oz ricotta cheese
- 2 cups spinach leaves
- ½ tsp salt
- ½ tsp black pepper
- ½ cup parmesan cheese
Lasagna Pasta
- ~10 sheets lasagna pasta
- 2 tbsp all purpose flour
- 1-2 cups heavy cream
- ½ tsp salt
- ½ tsp black pepper
- 1½ cups parmesan cheese
Instructions
Pesto
- Add basil, pine nuts, parmesan cheese, salt, black pepper, lemon juice and blend the mixture while slowly adding in olive oil.
Filling
- In a large bowl add some ricotta cheese, spinach, salt and black pepper.
- Mix everything well and then add in parmesan cheese.
Pasta
- In a large pot add water and salt and bring it to a boil.
- Then add the pasta and cook until al dente.
White Sauce
- In a pot add some butter and melt it.
- Then add in flour and whisk it with the melted butter.
- Then slowly add in heavy cream while whisking.
- Then add in salt and parmesan cheese.
- Mix well until the cheese has melted.
Assembly
- Add some sauce on the bottom of the tray.
- Then add the pasta sheets.
- After that add the filling, add some pesto and then cheese.
- Then repeat the steps. Finally add the sauce and sprinkle more ccheese on the top.
- Bake at 350 degrees until the top is golden brown then serve.
