Black Bean Burger

Ingredients
  

  • 1 tbsp olive oil
  • ½ green bell pepper, diced
  • ½ red bell pepper, diced
  • 1 cup mushroom, sliced
  • 1 tbsp hot sauce, of choice
  • 2 cans black beans, washed
  • 2 cans chickpeas, washed
  • 1 tsp chili flakes
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ tsp italian seasoning
  • 1 cup bread crumbs
  • 1 tbsp all purpose flour
  • mozzarella cheese slices
  • cup vegan mayo
  • 2 tbsp hot sauce, of choice
  • 1 tbsp pickled jalapeno, diced
  • 6 burger buns
  • ~1 lettuce head
  • 1 whole tomato, sliced
  • spinach leaves
  • 1 whole avocado, sliced

Instructions
 

Patties

  • In a pan heat up some oil.
  • Then add in bell peppers, mushrooms and hot sauce.
  • Cook until tender and all the water from the bell peppers has been burnt off.
  • In a large bowl combine black beans, chickpeas, vegetable mixture, chili flakes, salt, black pepper, Italian seasoning and bread crumbs.
  • Mix well until everything is well combined.
  • Then add come all purpose flour and mix well until well combined.
  • Then form into patties and then coat them in all purpose flour.
  • Then in a pan heat up some oil.
  • Cook the patties until golden brown from both side. If you like it more crunchy you can even bake them in the oven.
  • Once cooked then add cheese slice and take it off the stove.

Spicy Mayo

  • In a bowl take some vegan mayo.
  • Then to that add in some hot sauce and diced pickled jalapenos. Mix it well.

Assembly

  • Toast the buns.
  • Then on both sides spread the spicy mayo sauce.
  • Then add lettuce, patty, tomato slice, spinach leaves and avocado.
