Mango Chickpea Curry
Ingredients
- 1 tsp vegetable oil
- ¼ tsp cumin seeds
- 3 whole bay leaves
- ½ tsp ginger, grated
- 1¼ cups coconut milk
- ½ tsp garam masala
- ¼ tsp cinnamon
- ¼ tsp red chili (or to taste)
- ½ tsp salt (or to taste)
- ¾ cup mango pulp
- 2 tbsp water
- 1 can chickpeas, washed
- ½ tsp kasuri methi
Simple Rice
- 3 cups water
- 1 cup rice, washed
- coriander leaves to garnish
Instructions
Chickpea Curry
- Add the oil and heat it up.
- Once the oil is heated add cumin seeds, cloves, bay leaves and ginger.
- Saute it and then add coconut milk.
- Add all the spices and the mango pulp.
- Add water and then cook the curry.
- Add in the chickpeas and kasuri methi.
- Bring it to a simmer and then take it off the stove.
Basmati Rice
- Bring water to a boil and then add in the rice.
- Cook the rice until its cooked.
