Mango Chickpea Curry

Ingredients
  

  • 1 tsp vegetable oil
  • ¼ tsp cumin seeds
  • 3 whole bay leaves
  • ½ tsp ginger, grated
  • cups coconut milk
  • ½ tsp garam masala
  • ¼ tsp cinnamon
  • ¼ tsp red chili (or to taste)
  • ½ tsp salt (or to taste)
  • ¾ cup mango pulp
  • 2 tbsp water
  • 1 can chickpeas, washed
  • ½ tsp kasuri methi

Simple Rice

  • 3 cups water
  • 1 cup rice, washed
  • coriander leaves to garnish

Instructions
 

Chickpea Curry

  • Add the oil and heat it up.
  • Once the oil is heated add cumin seeds, cloves, bay leaves and ginger.
  • Saute it and then add coconut milk.
  • Add all the spices and the mango pulp.
  • Add water and then cook the curry.
  • Add in the chickpeas and kasuri methi.
  • Bring it to a simmer and then take it off the stove.

Basmati Rice

  • Bring water to a boil and then add in the rice.
  • Cook the rice until its cooked.
