Pesto Chickpea Salad
Ingredients
Pesto
- 2 cups basil
- ⅓ cup pine nuts
- ½ cup parmesan cheese
- ½ tsp salt (or to taste)
- ½ tsp black pepper (or to taste)
- ¼ cup lemon, juice
- ⅓ cup olive oil
Bread
- 2 tbsp butter
- 1 tbsp olive oil
- ¼ tsp chili flakes
- ¼ tsp italian seasoning
- ¼ tsp oregano
Salad
- 1 can chickpeas, washed
- 1 cup cucumbers, sliced
- 2 whole tomatoes, diced
- 1 cup spinach, washed
- ¼ tsp salt (or to taste)
- ¼ tsp black pepper (or to taste)
Instructions
Pesto
- In a blender add basil, pine nuts, parmesan cheese, salt, black pepper, lemon juice and olive oil.
- Blend until smooth.
Salad
- In a large bowl add chickpeas, cucumbers, tomatoes, spinach, pesto, salt and black pepper.
- Mix well until everything is well combined.
Bread
- In a small bowl add some butter, olive oil, chili flakes, italian seasoning and oregano.
- Mix well until well combined.
- Then spread on bread slices and bake until toasted.
