Pesto Chickpea Salad

Ingredients
  

Pesto

  • 2 cups basil
  • cup pine nuts
  • ½ cup parmesan cheese
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper (or to taste)
  • ¼ cup lemon, juice
  • cup olive oil

Bread

  • 2 tbsp butter
  • 1 tbsp olive oil
  • ¼ tsp chili flakes
  • ¼ tsp italian seasoning
  • ¼ tsp oregano

Salad

  • 1 can chickpeas, washed
  • 1 cup cucumbers, sliced
  • 2 whole tomatoes, diced
  • 1 cup spinach, washed
  • ¼ tsp salt (or to taste)
  • ¼ tsp black pepper (or to taste)

Instructions
 

Pesto

  • In a blender add basil, pine nuts, parmesan cheese, salt, black pepper, lemon juice and olive oil.
  • Blend until smooth.

Salad

  • In a large bowl add chickpeas, cucumbers, tomatoes, spinach, pesto, salt and black pepper.
  • Mix well until everything is well combined.

Bread

  • In a small bowl add some butter, olive oil, chili flakes, italian seasoning and oregano.
  • Mix well until well combined.
  • Then spread on bread slices and bake until toasted.
