Vegan Thai Soup Recipe

This Thai tofu soup is hearty for cold winter days and takes less than 15 minutes to make! Oh and feel free to toss in your favorite veggies and make this recipe your own!

Thai Tofu Soup

Servings 4 people

Ingredients
  

  • 1 tbsp vegetable oil
  • 2 whole green chili, diced
  • 1 tsp ginger, grated
  • ½ cup red bell pepper, julienned
  • ½ cup mushrooms, julienned
  • 1 can coconut milk
  • 2 cups water or broth
  • 1 tbsp brown sugar
  • ½ tbsp soy sauce
  • 1 tsp lemon juice
  • 10 oz extra firm tofu, diced

Instructions
 

  • Heat up some oil in a pot.
  • Then add add green chili and ginger paste.
  • Add in the sliced bell peppers and mushrooms.
  • Add in one can of coconut milk, soy sauce, brown sugar and lemon juice.
  • Simmer for 4-5 mintues and then add in the tofu.
  • Simmer for another 4-5 mintues and then serve.
