Sweet and Sour Tofu Lettuce Wrap
Ingredients
Sweet and Sour Sauce
- ¼ cup water
- ½ tsp cider vinegar
- ½ tsp soy sauce
- 2 tbsp tomato paste
- 3 tbsp brown sugar
- ½ tsp corn starch
- 1 tbsp ketchup, of choice
Tofu
- ½ tsp cider vinegar
- 1 tbsp soy sauce, of choice
- 1 pack cubed firm tofu
- 2 tbsp corn starch
- 1 tbsp vegetable oil
- ½ red bell pepper, diced
- ½ green bell pepper, diced
- ¼ tsp salt
- ~1 pack butter lettuce leaves
- ~half red cabbage, shredded
- ~1 whole carrot, shredded
- sesame seeds
- cilantro leaves, to garnish
Instructions
Sweet and Sour Sauce
- In a small pot add some water, cider vinegar, soy sauce and tomato paste.
- Mix well until everything is well combined and no lumps are left.
- Then add in brown sugar and corn starch.
- Mix well until well combined and then add in ketchup.
- Cook on low heat until the sauce has thicken then take it off the stove.
Tofu
- In a large bowl add some cider vinegar and soy sauce.
- Then add in the tofu and mix it well.
- In a large ziplog bag add some corn starch.
- Then add in the tofu and mix well until the tofu pieces are well coated.
- In a pan heat up some oil and then cook the tofu until crispy.
- In a pan heat up some oil and then add in bell peppers and salt and cook until slightly tender.
- Then add in the cooked tofu and the sweet and sour sauce.
- Mix well and cook for 1 minute on low heat.
Assembly
- Take some lettuce leaves and then on top add some shredded red cabbage.
- Then add the tofu mixture and serve.
